I’ve been on the Keto diet since the day after Thanksgiving. It has been pretty good so far! I’ve lost about 8 lbs. (slow and steady) since I started.
If you’re not sure what this is or what entails, where have you been? Haha.
All joking aside, it’s one of the most beneficial eating styles that I’ve encountered. And I’ve done just about every single diet out there in the last 20 years.
Why I love the Keto Diet
One of the reasons I love this eating style so much is that it’s easy to recreate your favorite foods at home so you never feel deprived.
This is the first diet that I actually haven’t felt is a diet at all. In the restricting sort of way.
But, with everything good, there is always a challenging piece to the puzzle. Being frugal is really hard on this eating plan. Mainly because the majority of the diet is healthy fats and protein, which tend to be much more expensive than processed carbs.
So, I decided to go on a mission to make this style of eating a little more affordable.
How?
By recreating some of my favorite meals at home.
How cool would it be to save money and lose weight at the same time?
So, I was ready for the challenge. I started researching on Pinterest and watching Youtube videos to learn all I can about what foods I can and cannot eat. I started following people on Instagram to have an idea of good recipes that are popular.
I was so excited to find frugal alternatives to maintain this amazingly delicious lifestyle that is keto.
This is where I came up with a fusion of a taco and an In N Out burger.
I’m calling it In N Out style Keto tacos.
I came up with it one day because I was making meatballs for my family when I started to get hungry.
I had a few extra packets of In N out sauce and ground beef and initially thought to make a burger.
But, at that point, I had been eating a lot of burgers (as you can probably guess with all my leftover in n out sauces, haha) and it didn’t sound good. So, I made simple tacos instead and it was delicious!
The shell isn’t a fried cheese shell either-not that I have a problem with the cheese shell….I heard it’s good..is it good?
I combined two different recipes and made a hybrid recipe.
I used a keto pancake batter, and made it savory. I also combined my passionate love for everything in n out burger and made it into a taco.
So Yummy!!
Let me tell you what you need.
Ingredients for the shell (makes 4 shells):
¼ cup of cream cheese
2 eggs
Salt & pepper
Ingredients for the filling (makes 4 tacos):
¼ ground beef
⅛ of an onion- chopped finely
Taco seasoning or salt & pepper
Shredded Sharp Cheddar Cheese
In N Out sauce (I had some extra from the other day, but you can make your own thousand island sauce)
Directions for the Shell
The cooking instructions are very similar to how you would cook a crepe. Combine and whisk the ingredients together until you have a smooth, thin batter.
Then, put about 2 TBSP at a time in a small skillet and spread the batter around in the pan until it coats the bottom in a thin layer. Cook for about a minute or two, then flip. Repeat with the rest of the batter.
Directions for the Filling
Add onion to a dry pan and immediately add ground beef (the onion will cook in the ground beef fat). Add seasoning and cook until brown. You may choose to drain excess fat, I just leave it in for flavor.
Assemble your taco and top it with your In N Out sauce and the cheddar cheese.
